Lettuce Cups

Ingredients
8 iceberg lettuce leaves
1 tablespoon sunflower oil
1 brown onion, diced
1 clove garlic, diced
500g extra lean pork mince
6-8 button mushrooms sliced
1 carrot, grated
1 zucchini, grated
2 tablespoons hoisin sauce

Method

  1. Heat oil in fry pan and add onion and garlic until cooked. Add mince and cook until browned.
  2. Add vegetables and cook until soft.
  3. Add hoisin sauce and cook for further 2 minutes.
  4. Spoon into lettuce cups and serve.  chick
